History and present

Only those who are conscious of their past can build their own future.

The dream of creating a place where simple ideas are transformed into new flavours, experimenting with radically new culinary combinations, came to life in 1989 when Sonia Visman and Francesco Cacciatori set their hearts on buying a farm building and turning it into their idea of ​​a restaurant.

In 1999, the urge to improve sees them buying and renovating an adjacent barn, which soon becomes the current headquarters of the restaurant.

In 2014, their dedication and passion for this profession for 11 consecutive years is deservedly recognised with the award of a Michelin Star.

In 2015, still driven by their urge to expand, the more informal “Albergaccio dell’Osteria” comes to life in the premises of the original restaurant.

Experience, creative flair and high-quality ingredients have transformed Ristorante Albergaccio into a reference for a discerning audience, one eager to experience new tastes and flavours within a classic and family atmosphere.

The ambience

Set in one of the most characteristic panoramic areas of Castellina in Chianti, Ristorante Albergaccio (the restaurant) is housed in an old farm building, which has been completely restored.

The rustic architecture of the façades takes most guests by surprise because, once past the entry threshold, they are immersed in a classic and utterly refined environment. Floors and platforms covered in Chianti’s terracotta, cypress beams, and walls in alberese stone confer nobility and elegance to the main hall, which is arranged on two levels.

 

Cuisine

As the perfect host, the owner Francesco Cacciatori will advise lunch and dinner guests on the choice of dishes, as well as on the numerous wine varieties held in the well-stocked cellar, located in the basement under the restaurant’s main hall. Typical dishes of the Tuscan cuisine revisited in modern key, where inspiration, imagination and experience are mixed together to create dishes with an unique taste.

The wine cellar

Located in the basement, the cellar is a real treasure chest that guards the most prestigious wines held inside the premises.

There are approximately 320 wines housed in this temperature-controlled environment, varying in geographical origin, vintage and format, all of which have been personally chosen over the years by the owner, Francesco Cacciatori.

The current range is the result of careful evaluations designed to optimally enhance the dishes proposed. In Francesco’s view, this generous selection represents the best of Tuscan wine production and of the most important national and international regions, with particular attention to small wineries, which are often engaged in organic or biodynamic production.
